Ingredients:

  • 3 ripe bananas, mashed
  • 1/2 cup warm milk
  • 2 tablespoons brown sugar
  • 2 teaspoons instant yeast
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup chocolate chips (optional)

Instructions:

  1. In the D'BakerAid's D'Yeast bowl (2.75q), combine warm milk, sugar, and instant yeast. Stir gently and let it activate choosing the program suitable for the yeast type you are using, until foamy.
  2. In the D'BakerAid's D'Dough bowl (4.75q), combine the all-purpose flour, salt, cinnamon, and nutmeg. Mix well with Danish whisk or wooden spoon. Or directly in the standing mixer’s bowl if you’re using it for kneading.
  3. Add the mashed bananas, softened butter, and vanilla extract to the D'Dough bowl. Pour in the yeast mixture as well.
  4. Attach the dough hook attachment (if using a standing mixer) or mix and knead by hands. Mix on low speed until the ingredients are well combined.
  5. Increase the speed to medium and knead the dough for about 5-7 minutes, or until it becomes smooth and elastic. If kneading by hand, transfer the mixture to a floured surface and knead for the same amount of time.
  6. Optional: Add chopped nuts and chocolate chips to the dough and knead briefly to incorporate them evenly.
  7. Cover the D'Dough bowl with the lid and select the dough program for white flour or adjust the program manually based on the recommended time and temperature for bread dough.
  8. Allow D'BakerAid to complete the dough program, letting the dough rise until it doubles in size. This may take around 40 min depending on the program selected.
  9. Once the dough has risen, remove it from the D'Dough bowl and gently shape it into a loaf. Place the loaf into a greased bread pan.
  10. Cover the pan with a damp tea towel and let the dough proof for an additional 30-45 minutes, or until it rises slightly above the rim of the pan.
  11. Preheat the oven to 350°F (175°C) while the dough is proofing.
  12. Once proofed, remove the tea towel and transfer the bread pan to the preheated oven.
  13. Bake for approximately 40-45 minutes, or until the top of the bread is golden brown and a toothpick inserted into the center comes out clean.
  14. Remove the banana bread from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
